Carrot and coriander soup is something different I had tried today. This recipe was given to me by one of my friend who is a carrot lover. It was bit new for me to try as I was amazed with the combination of carrot and coriander.

But guess what, the dish turned really amazing and tasty. Carrot and coriander both are highly nutritious vegetables, and hence when both are combined it turns into very very healthy soup.

Carrot and coriander soup does not contain any fattening agent, no cream, no cheese, no cornflour. This soup is low-calorie soup, as there is no oil used in the soup, so even good for those who are vegans. My hubby use to have this soup 1-2 times in a week when he was on the weight-loss program, he really enjoyed it and also the results were seen.

Carrot and coriander soup is really quick and easy to make. It is very tasty and healthy soup.

Carrot and Coriander Soup

Serves: 2

Preparation Time: 5 Mins
Cooking Time: 15 Mins

INGREDIENTS:
  • 2 Medium Size Carrrots roughly chopped into cubes
  • 2 Tbsp chopped coriander leaves
  • Salt and black pepper powder as per taste
METHOD:
  1. Add the chopped carrot cubes in a pressure cooker, add 1 cup water to it and cook in the pressure cooker for 2-3 whistles.
  2. After that transfer the carrots into a big bowl, they will be soft and allow it to cool at room temperature.
  3. Add chopped coriander leaves to the carrot and blend it with hand blender.
  4. Transfer the soup mixture into a big pan, add little water and boil it for 3-4 Mins. Add salt and black pepper powder as per the taste.
  5. If you like thick soup, add less water, if you like bit watery soup then add more water, you can adjust water levels in the soup, as per your soup's consistency.
SERVE HOT!!
