Spinach-Corn Gravy
Spinach corn gravy is full of nutrients, spinach gives a very good flavor and color, it makes a good companion to sweet corn.

Spinach and sweet corn are my favorite combination, the sweetness of corn goes well with the bland taste of spinach. Those kids who do not like the taste of spinach, you can give them this gravy and kids will surely love this gravy. Spinach corn gravy is perfect gravy for dinner/lunch.

Spinach-Corn Gravy
Serves 4
Cooking Time:45 Mins

INGREDIENTS:
  • 1 bunch of fresh Spinach
  • 1 medium Onion( finely chopped)
  • 1 cup boiled Sweet corn
  • 1 tsp clarified butter/olive oil 
  • 1 tsp Cumin seeds
  • 1 tsp Asafoetida
  • 2 tsp Ginger-Chilly paste( If there is a confusion for ginger-chilly paste, then check my recipe of vegetable pancakes, it is explained there)
  • 2 cloves Garlic(grated/finely chopped)
  • 1 tsp turmeric powder
  • 1-2 tsp Red chilly powder
  • 1-2 tsp Garam masala(if not available use Coriander Powder)
  • 3 tsp Dried Fenugreek Leaves
  • Salt as per the taste
METHOD:
  1. Take a vessel Add Spinach to it, let it blanch for few mins if require add few drops of water.
  2. After the Spinach is blanched, let it cool for few mins, then grind the spinach in a mixture grinder, till it becomes a smooth paste.
  3. Take a non-stick pan, add Fenugreek Leaves to it and roast for 1-2 mins. Crush the fenugreek leaves with hands and keep aside.
  4. Take a Pan, add clarified butter/olive oil, after the oil is heated, add Cumin seeds, Asafoetida and saute Onions.
  5. After the Onions turn transparent, add Ginger-Chilly paste, garlic, Turmeric Powder, and still well.
  6. Add Red chilly powder, Garam Masala/Coriander Powder. Add Spinach Gravy and still all the ingredients well.
  7. Add Crushed Fenugreek leaves as done in Step no.3, in the Gravy, Add salt as per the taste.
  8.  Add Boiled Corns, and stir well.
Serve HOT!!

Can be served with: this Gravy Can be served with Rice, Bread/Indian Breads.
