The soup has not been strained in order to retain the fiber/nutrients of the Broccoli.

BROCCOLI SOUP RECIPE:

INGREDIENTS:
- 1 bunch of broccoli floret
- 1 tbsp olive oil/ghee/clarified butter
- 1 medium chopped onion
- 1/2 cup fat-free milk
- Salt
- Black pepper powder
- Heat the oil in a pan, add chopped onion and saute till onion turns translucent.
- Add chopped broccoli florets, add one and a half cup of water and mix well, cover and cook for 3-4 mins, stir occasionally.
- Blend the mixture with hand-blender.
- Transfer the mixture into a pan, add milk, salt and black pepper. Boil for 2-3 mins.
Can be served with: Brown Bread loaf pieces/breadsticks.
